New Look

We have decided that we would like to redo C.J.'s Food. Call it a spring cleaning, if you may. What our goal is that we hope to clean up our website and be free from cluttery looking content. We want C.J.'s Food to be fresh again like it was when we first started out as Kero's Food. We have dumped a lot of old boring content which will soon be replaced by new and exciting content that will be more compelling to our readers. Some of the updates we will be doing are quite out of our levels of comfort, but we figure we might as well try them anyway. Here is a quick list of the content we will be making changes to.

- Template: We are going to be switching to a lighter brighter template.
- New Content: Old content such as old blog posts and useless forums have been deleted
- Photos: Our old photos have been dumped and replaced with our more recent photos
- Our old blog has been changed to our news section of the site(This page).
- Our Forums have been totally redone. We have deleted a lot of content and will be working to put in our new content.

These are just some of the updates that we will be working on over the next few weeks or so. We figure to be done most of it by April 3rd. We would to thank all of our fans for supporting us during this time and we hope that you will enjoy our new content as well as the new look. - C.J.’s Food.

Restaurant Review: Cheese Factory

First things first, before I get into doing this review I would like to let people know of my method of coming up with a reasonable review. I rate these establishment by three categories.

I give upwards of 10 points for food. This is judged by Taste, Quality and how it is presented and so forth. I give upwards of 5 more points to service. How fast it is made while keeping up the integrity of the dish as well as how friendly the servers are and how well they do their job. I also give an additional 5 points to having a good well maintained atmosphere as well as having a clean looking establishment.

So now that I am done with explaining the method to my madness I am going to quickly give a description of the cheese factory and then I will then proceed with my review of the establishment.

The Cheese Factory is located on the south side of Edmonton on white ave (82 ave) and 91 street. The Cheese Factory is not only a restaurant but also a retail establishment. They package and sell various items such as some canned goods, packaged gravy mixes, and of chorus many types of really great looking cheeses including some flavors I never have seen before like beer flavored cheese. When we were paying for our meal we had a chance to quickly talk with the owner. He had said that he has been to Quebec to learn many recipes for gravy and that he created his gravy from having that knowledge. He had explained to us that his gravy was MSG and fat free. I was pretty impressed about that. Usually the fat in the gravy provides a lot of flavor but there was no lack of flavor in this dish. They also make all the cheese there in house, which tasted really good and fresh. I was very impressed and it will show in this review.

They have a pretty good selection of food for a smaller restaurant and I was pleased to see that they was variety as well. There is something for everyone. They have everything from poutines and 1/4 chicken to calamari and various sandwiches. All three of us decided to go with the original poutine. Freshly cut fries, with homemade gravy and fresh cheese curds. This dish for me gets a 10/10. I am not one for poutines because it is hard to have a decently made poutine, until I came here. Everything tasted fresh and the cheese curds is what really makes it. This is hands down the best I have had in all of Edmonton.

The service there was really great and very friendly. When you walk in you can sit down where ever you like, if there not busy I assume. As soon as we sat down, a waitress came and handed us our menus and ordered our drinks right away. When she came back she took our orders and came out moments later with our food. The food was served quickly, and you could tell it wasn't sitting, waiting to be brought out to the table. While we were eating they came around a few time and asked if we needed anything else which is what I like to see. All in all it was very good service and very friendly. For this I rate it a 5/5.

This building has been there for years, and although I couldn't tell you how long it has actually been around for they have kept it up pretty good. They had a nice looking bar off to the left when you walk through the entrance. They had decent looking tables in chairs that seemed to be in great shape and good tableware. The one thing I would like to see in this establishment is better lighting. Instead of having that second entrance there which is lock anyhow, I would take it out and put in windows there so it lights up more of the establishment, in which in my opinion was just a tad gloomy. The lighting is still decent though and the restaurant has a very unique atmosphere. It is defiantly a great cafe style restaurant and for me this has earned a 4/5.

Here are the results:

Food and Presentation - 10/10
Service - 5/5
Atmosphere - 4/5

This is definitely a restaurant that I would recommend to any one of my friends or family, and one that I will go back to in the future. I was impress with all aspects of the establishment and this has gotten a nearly perfect review in my books. I am looking forward to seeing this restaurant continue to provide great food and amazing service. If you are looking for a new place to try or if your just looking to buy cheese, this place is the place to check out. This has been my review of the Cheese Factory Restaurant.

Chips with a Siriacha Mayo Sauce

Today I decided to try a new sauce. I remembered being told about Siriacha mayo sauce, but I didn't actually know what was in it besides mayo and hot sauce. Turns out, that is pretty much all it is. I looked into a few recipes and they were all slightly different variations of this simple recipe.

After about an hour of looking through different variations of the same thing I decided to try and make the original version of this sauce. Very simple, very creamy, and has a very nice kick to it. Only problem I had with it is that I didn't have anything with it.

I soon decided to slice up a potato to make chips with this sauce. The reason I thought of chips being the perfect counterpart to this dish was because of the sauce for some reason reminded me of a ranch dip, only with a kick. I don't know, maybe it's just me. Anyhow, the sauce/dip made a very great condiment for the chips. This dish ended up being very good.

I soon thought of other things I could use this sauce on. Then it hit me. I'll make a sandwich and use the sauce to accompany it. Unfortunately I didn't have sandwich meats. Which is great because I like real sandwiches with real meat and not that possessed stuff.

I also came to the conclusion that this sauce would also be great on veggies. So to quickly test that theory I cut up some celery to munch on. I used the dip with it and I was pleased to say that it goes really well with vegetables as well. This is defiantly a great sauce to add to my list. I am looking forward to seeing what else this sauce will go with.

This recipe was really quick and really easy to make. The sauce itself took only like 5 minutes to whip together. I would like to warn some people though, If you can't handle spice then you probably won't like this. Also you can make it so there is less hot sauce which is another great thing about this recipe. It can easily be modified to make it less intense or more intense. It is also really easy to modify the recipe to make it your own. This is definitely a sauce worth trying.

Full Recipe at http://www.CJSFood.com/ or you can also find it on our Facebook Page. We hope you enjoy this and other great recipes at C.J.'s Food. - C.J. Bevan.

Frozen Mudslide

The Frozen Mudslide.

A Perfect combination of Baileys, Kahlua, Vodka, Ice Cream, and Chocolate sauce. Every chocolate lover would enjoy this drink. It's really easy to make and you can customize it to how thick you want it. It is definitely a great adult milkshake that everyone would enjoy.

Frozen Mudslide:

- 1 oz. Bailey's Irish Cream
- 1 oz. Kahlua
- 1 oz. Vodka (I prefer to use absolute.)
- 1 squirt of chocolate sauce
- Ice cream (Add more to make thicker.)

First take all the ingredients and blend them togeather in a blender making sure that you are at the right consistency that you would like. Next, get a hurricane glass or another fancy type glass. Take extra chocolate syrup and poor around the glass and then let gravity do her magic. After you are done blending the drink and now that your glass is ready for it, take the finished product and slowly poor it into the glass being careful not to undo the chocolate around the glass. It's best to use a heaver chocolate sauce to avoid the problem, such as using Hershey's in comparison to Nesquik.

Hopefully you will enjoy this drink as much as everyone else has. If you did like it, leave us a comment and tell us what you thought of it. Remember you can share this with your friends on Facebook by clicking down below. Introduction To Food...

We live in a world that is surrounded by food. We see it everywhere, weather it be walking down the street and seeing a bill bored, or at home watching T.V. Food is really important to us, not only because we need it to survive, but also for many other reason such as cultural diversity. The food you find here in Canada, or the States will be much different from say places like the Ukraine, India, Ireland, Scotland, and many other places that have different verities of dishes. Yes, now in days we see a McDonald's or Burger King every couple blocks, but I am not talk about Fast food, I'm talking about real food. But more to the point. I have created this blog on behalf of C.J.'s Foods, which is my official food website. What C.J.'s Foods has done is created a small community of people who like to share recipes, try new things, show off their creations, and much more.

Just a little information about the website. We have 14 members of the community so far, and we are always looking for more people to join. We have great content such as voting and nominating monthly recipes. A place to submit your recipes with a chance to have them featured as our top recipe. We have active forums for those who like to have conversations about various topics about food. We have a great health section of the website for those who wanna post healthy recipes and make them known. We even have our own Facebook page for those who are fans, and you can use Facebook to sign-in.

One of our more impressive things going right now is the fact that we are working on a section of the site called herbs and spices. This is a ever-growing collection of information about herbs and spices. It will one day be complete with the help of our community. It will have every kind of herb and spice known to mankind and information about the use of it in food or as a remedy. All that information will be included while we continue to create our long list.

Another great thing about C.J.'s Food is that we really enjoy posting facts and historic pieces about food, such as where did the food originate, is there a difference in cooking methods between back then, and today. We also post little random facts about the food or culture too. Like did you know that back in a day during the days of the race to the new world that people ate fermented cabbage (sauerkraut) to prevent scurvy. It's because of the high amounts of vitamin C found in the sauerkraut that prevented scurvy which essentially is a illness caused by the lack of vitamin C.

Anyhow, This has been C.J.'s Food First Official blog post. We hope that you enjoyed reading and that you have a better understanding of who we are and what we do. Feel free to come check out our website, or Facebook page sometime. Even join up and start to post your own content such as recipes and more. Thanks for reading, and Happy St. Patrick's Day!
